These have basically replaced my knife for half the stuff I used to do on a cutting board. Breaking down a whole chicken took no time, and the pivot is tight enough that it doesn't wobble on tougher joints.

The small size makes these so much easier to control when snipping herbs straight into the pan. They cut through chicken bones without much effort, and the handles stay comfortable even after a pile of prep work.

I've been reaching for these every time I break down a chicken now — they cut through joints way easier than my old knives. The small blades still feel sturdy and controlled, and cleanup takes about ten seconds.
