The steel really is rust-proof—I've left a knife wet on the counter overnight twice now and there's not a single spot. The chef's knife glides through butternut squash without me having to saw at it, which never happened with my old set.
The set covers every task in my kitchen without feeling bulky, and the ACUTO440 steel has stayed spotless through weeks of daily chopping and slicing. Even the smaller pairing knife holds an edge surprisingly well for fine work. Definitely the last knife purchase I'll need for a while.
