Diced a whole pile of onions and peppers with this last night and it went through them like butter. The 8-inch length feels just right for everyday prep, and the white handle is a nice change from my old black one.
The AUS-10 steel really holds an edge — I've been using it daily for a couple weeks and haven't had to touch it up yet. Broke down a whole chicken with it last night and the 8-inch blade went through joints way cleaner than my old knife.
Diced a whole pile of onions and peppers for chili last night and this 8-inch blade went through them like nothing. The weight feels right in my hand too, not too heavy at the back end.
