The 5-ply bottom really does distribute heat evenly—my tomato sauce simmered without a single scorch spot on the bottom. It’s noticeably lighter than my old cast iron one, which makes lifting it to the sink a lot less of a workout. Soups and braises have come out perfect every time so far.
