The 10-inch length is what sold me and it really does make a difference on big loaves — one smooth pull and I get even slices instead of squished ones. The AUS-8 edge is still sharp after a few weeks of near-daily use, and the blue handle wipes clean easily.
Sliced through a crusty sourdough loaf and the crumb stayed completely intact, no squishing at all. The serrated edge glides through tomatoes too, which I didn't expect from a bread knife.
The 10-inch length makes a huge difference on big sourdough loaves — no more sawing back and forth, just one clean pass. Crust stays crackly and the crumb doesn't get squished at all.
