The serrated edge on this one actually bites into crusty sourdough instead of squishing it flat, which was my whole reason for buying. The AUS-8 steel feels properly solid in hand too, not flimsy like the cheap one it replaced.
Bought this mainly for tomatoes and it glides through the skin without squashing them, which my old knife never managed. The serrated edge on the AUS-8 steel still slices cleanly after a few weeks of daily use.
The AUS-8 steel holds an edge way better than the cheap serrated knife I had before, and it still glides through crusty sourdough without squashing the loaf. The personalized engraving came out crisp and clean too.
