The AUS-10 steel takes a scary sharp edge and holds it through a whole dinner prep. I've been reaching for it instead of my chef's knife for onions and chicken, and the personalized handle makes it feel like it's actually mine.
The 5.5" size is perfect for the stuff my chef's knife is too big for — shallots, herbs, breaking down a chicken. Arrived with a really clean edge out of the box and the handle feels solid in hand.
The AUS-10 steel holds an edge way longer than the cheap knife I was replacing, and the 5.5" blade handles everything from trimming chicken to slicing apples. Since it's a final sale I took a chance, but honestly I'd pay full price for another.
