The AUS-10 steel holds a scary sharp edge — I diced onions and minced garlic for an hour and it barely needed a touch-up. The 6.5" length is perfect for my small hands, way easier to control than the big 8" I used to dread.

Wasn't sure a 6.5 inch blade would feel like enough knife, but it's become the one I reach for most—dicing onions and mincing garlic feel way more controlled than with my big 8 inch. The AUS-10 holds its edge nicely too.

Scarlett Z. ★★★★★

The AUS-10 steel takes a scary sharp edge and holds it through a whole pile of onions without dragging. I reach for this over my bigger chef's knife now for everyday dicing since it's so much easier to control.
