These have enough grip to flip a heavy roast without it slipping, but the tips are narrow enough that I can plate a single slice without smudging the sauce. The spring tension feels just right too, not so stiff my hand aches after prepping for an hour.

Grabbed a pork shoulder out of the crock pot with these and they didn't bend a bit — the steel feels genuinely solid. Tips are narrow enough that I also used them to plate sliced chicken without mangling it.

The spring action is smooth enough that I can grab a single asparagus spear without crushing it. I've also used them to flip a roast in the pan and they didn't bend a bit.
